Lemon grass—it’s the distinguishable ingredient in your sweet and sour soup and a prominent flavor in Thai and Vietnamese dishes, and one that’s becoming more common in your local supermarket. Lemon grass adds a unique subtle citrus flavor to foods and is easy to use. Remove the toughest outer leaves, then chop the stalk (white part only) to flavor marinades, soups and dipping sauces. Even better, grow this grass yourself. A small 3-inch pot purchased from an herb supplier will quickly spread to fill a large container. When a recipe calls for a grill basket, reach for this handy grill pan instead.
