Best Thing About Flying

You got to admit airplane food is not getting any better. Despite the celebrity chefs recruited to consult on their menus I see no signs of hope. There is one glimmer though in the sky, and that is Delta’s Biscoff cookies. Although they’re not distributed on all flights, they make an appearance every now and then. Anyone else love these crisp gingerbread cookies? I would love to duplicate them at home. Anyone got a recipe?

Jill--I adore those Biscoff cookies, too. In fact, I order them all the time (www.biscoff.com). You can get them in really handy little two-packs that are easy to tote. Also try the "Nutrigo" specials--these are reminiscent of Biscoffs, but have a little extra fiber, with fruit, oat flakes, and wheat germs. I'm a big fan.

But getting back to your question as to a recipe.... Another food editor told me that Biscoffs were basically Speculoos. Find a recipe for that, and you may be close.
