Lactose and Lactic acid are two different things!! So your comment about lactose intolerance and eating Parmigiano-Reggiano doesn't make sense at all. Lactic acid has only 3 carbons Lactose has 12, the problem with lactose intolerant people is they can't split the sugars that make lactose (glucose and galactose) not lactic acid, everybody in the world has problems with lactic acid and greater than 99% of the population can break down lactic acid with no problems.

Relish magazine is distributed monthly through newspapers across the country. If you local paper does not carry Relish, ask them why not?
