Good Cookies - Scouts Honor
It's probably safe to say that most of us didn't celebrate Girl Scout Week, kicked off last week with the birthday of Juliette Gordon Low, the founder of the Girl Scouts. However if eating our weight in Thin Mints and Samoas qualifies, then we've been honoring it in a big way. But once the boxes are empty, and there's no more in sight until next year, what's a cookie monster to do? Bake some, of course. These cookies hail from Spring Garden Ranch in Longmont, Colo., where we're told that upon being baked, they're hidden from the ranch hands until official serving time. If it's spring break in your neck of the woods, grab your kids and bake a batch. And, if you like them as much as we did, there's more where those came from.
Chocolate Ranch Cookies
This dough is sticky. For ease in scooping, chill it before baking.
Ingredients
| 1/2 | cup butter, softened |
| 1 1/2 | cups chocolate cookie crumbs |
| 1/2 | cup uncooked quick oats |
| 1 1/3 | cup flaked coconut |
| 1 | (14-ounce) can sweetened condensed milk |
| 1/2 | cup all-purpose flour |
| 2 | teaspoons baking powder |
| 1 | tablespoon 2% low-fat milk |
| 1 | cup chopped walnuts |
| 2 | cups semi-sweet chocolate chips |
Instructions
| 1. | Preheat the oven to 350F. Using a heavy-duty mixer, combine butter and cookie crumbs. Mix in oats, coconut and sweetened condensed milk. Add flour, baking powder and milk. Stir in walnuts and chocolate chips by hand. (The batter will be very thick.) |
| 2. | Drop by rounded tablespoons onto an ungreased cookie sheet. Bake 12 minutes. Be careful not to overbake as the cookies should be chewy. Yield: 36 cookies. |
