Marinade Made in Heaven
We’ve been craving Thai food lately. The warmer weather makes us want the fresh, sprightly flavors of zesty lime, pungent fish sauce, sweet honey, and fragrant basil. (Although you may have to wait on the basil, as it’s about as hard to find in April as pumpkins in May). Nonetheless, combine these ingredients, toss in some garlic and heat for good measure and you have a marinade made in heaven. And while it’s great on chicken, pork, or beef, we’ve chosen shrimp, as it just feels right in April. Skewer large shrimp and throw on the grill or in the oven and serve with Coconut Couscous for a match made in heaven.
Thai Shrimp Kebabs

Ingredients
| 2 | pounds large shrimp, peeled and butterflied |
| 1/3 | cup fresh lime juice |
| 3 | tablespoons fish sauce |
| 2 | tablespoons vegetable oil |
| 2 | tablespoons honey |
| 3 | garlic cloves, chopped |
| 1 | jalapeno, seeded and chopped |
| Fresh chopped cilantro or basil |
Instructions
| 1. | Combine all ingredients in a large zip-top bag, seal and marinate in refrigerator 1 hour. Remove shrimp from marinade, thread onto 6 skewers. |
| 2. | Prepare grill or preheat oven to 350.Place skewers on grill or in oven, cook 4 minutes on each side or until done, basting with marinade. Serve with Coconut Couscous. Serves 6. |

Coconut Couscous

Ingredients
| 1 | cup water |
| 2 | garlic cloves, chopped |
| 1 | tablespoons olive oil |
| 1/2 | cup uncooked couscous |
| 1/4 | cup chopped dried apricots |
| 1/4 | cup raisins |
| 1 1/2 | tablespoons curry powder |
| 1/4 | teaspoon cayenne pepper |
| 1/8 | teaspoon salt |
| 2 | tablespoons chopped roasted pistachios |
| 2 | tablespoons shredded coconut |
| 1/4 | cup chopped green onions |
Instructions
| 1. | Bring water to a boil over medium heat in a 6-cup saucepan. Add the garlic and olive oil. Stir in the couscous, apricots, raisins, curry powder, cayenne and salt. Bring to a boil again and then remove from heat. Cover with lid and allow it to stand for 10 minutes. |
| 2. | Garnish with the pistachios, coconut and onions. |
