Father Knows Best
Sunday, June 18, the third Sunday of every June as we all know, is Father's Day. What you might not know is that it's also International Picnic Day. So, why not combine the two and take Dad on a picnic. He doesn't really want to grill out anyway. And although you may long for a trip across the Atlantic, you can more easily put the "international" in your picnic by serving this Mediterranean-inspired dish. It's a spin on the classic parsley-bulgur salad, tabouleh. We've added heart-healthy edamame, which are young, tender soybeans. And though they've been primarily trumpeted for women and heart health, they've also been shown to reduce the risk of prostate cancer in men—perfect for Dad.
Add some rotisserie chicken, lamb or beef, pita bread and hummus dip and you're set. In fact, with this menu in hand, you may stray no further than your backyard.
Tabouleh with Edamame and Feta

If you don't have bulgur, you can use orzo pasta in its place. Look for bagged, shelled edamame in the organic or natural foods section of the freezer case or fresh in the produce section.
Ingredients
| 1 1/4 | cups uncooked bulgur or cracked wheat |
| 2 | cups boiling water |
| 1/4 | cup commercial pesto |
| 3 | tablespoons fresh lemon juice |
| 2 | cups cherry tomatoes, halved |
| 3/4 | cup (3 ounces) crumbled feta cheese |
| 1/3 | cup thinly sliced green onions |
| 2 | tablespoons minced fresh parsley |
| 1/4 | teaspoon freshly ground black pepper |
| 2 | cups edamame |
| 4 | (7-inch) pitas, cut in half |
Instructions
| 1. | Combine the bulgur and boiling water in a large bowl. Cover and let stand 30 minutes. Drain. |
| 2. | Combine pesto and lemon juice; stir with a whisk. |
| 3. | Combine bulgur, pesto mixture, tomatoes, feta cheese, onions, parsley, black pepper and edamame in a large bowl. Toss gently to combine. Serve with pita halves. Serves 4. |
