Munchable Lunchables

So, the kids are back in school, and by now you've discovered that their lunch consists of bits and pieces of other kids lunches. That, or nachos and fries from the lunch line. No doubt, packing a lunch that is mutually acceptable to both you and your kids is one of life's bigger challenges. Enter a snack mix that doubles as a lunch and an after school snack. It's made from fortified cereal, so you know it contains a dose of vitamins and minerals, and peanut butter which provides a dose of protein. Choose a whole grain cereal (such as whole wheat or bran Chex, Life or bite-size shredded wheat) and you'll score big in the whole grain or fiber category too. Add a glass of milk and you'll have three of the four food groups covered. And, if the kids don't go for it, no worries- there's more for you.

Ingredients
3 tablespoons honey
2 tablespoons butter
3 tablespoons peanut butter
4 cups Chex cereal (assorted wheat and corn)
2 cups mini pretzels
1/3 cup peanuts

Instructions
1. Preheat oven to 175F.
2. Combine honey, butter and peanut butter in a microwave-safe bowl and heat until smooth. Combine cereal, pretzels and peanuts in a large bowl. Pour peanut butter mixture over cereal mixture and toss to coat. Spread on baking sheet and bake for 1 and 1/2 hours. Yield: about 6 cups (8 servings).
