Holiday on Ice

The book Mindless Eating by Brian Wansink has been on our minds. He's the food psychologist that tells us what we're eating and why. One of his findings (that shouldn't come as a shock to any of us) is that we tend to eat for longer (meaning more) when we're with people we like. The book also states that you eat proportionately more, the more people you're with. So you eat 35 percent more when you're with one person, 75 percent more if you're with 4 people, 96 percent more if . . . well, you get the picture. We guess then that our waistlines are doomed this holiday, as the party season means we're eating with more people. Not necessarily—not when you're armed with desserts such as our Tangerine Ice. This seasonal granita is made with one of the stars of the season, tangerines, and a little sugar and water. It's alarmingly simple and a perfect antidote to any bloated holiday meal. Eat it alone or with lots of friends—at 150 calories a serving, you can afford it.

Tangerine Ice

This recipe comes to us from Sherry Yard, pastry chef at Wolfgang Puck's Spago in Beverly Hills, Calif.


Ingredients
1/2 cup sugar
1/2 cup water
1/4 cup light corn syrup
1 quart tangerine juice
2 tablespoons tangerine zest
1/4 cup orange juice concentrate
2 tablespoons lemon juice
1/8 teaspoon salt

Instructions
1. In a heavy saucepan, combine sugar, water and corn syrup. Bring to a boil; remove from heat immediately. Add tangerine juice, orange juice concentrate, lemon juice and salt. Stir well. Pour into an 8-cup plastic container.
2. Freeze 1 hour; remove from freezer and stir or scrape with a fork to create ice crystals; repeat 3 times. Serves 8.
