Apple Time
Apple harvest festivals are taking place all over the country this month, U-Pick farms are opening their doors to eager pickers, and many grocery stores are stocking more than the usual Red Delicious, Winesap and Granny Smith. So here's a little Apple 101 to get you ready for the season:
  • 1 pound of apples = 2 large, 3 medium, or 4 to 5 small apples
  • 1 pound of apples = 3 cups peeled and sliced apples
  • An average apple contains 80 calories, 18 grams of carbohydrates and 5 grams of fiber.

Here's a recipe I've used for years during apple season. It's the kind of recipe that will fill your kitchen with mouth-watering aromas of spices and apples. Don't make it ahead, though; you'll want to serve this cake warm from the oven.

Apple Cake

Ingredients
Cooking Spray
8 tablespoons butter, divided
1 1/2 cups sugar, divided
1 egg
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 large tart apples, cored and chopped
1 cup coarsely chopped walnuts
2 teaspoons cornstarch
1/4 cup evaporated milk
1 teaspoon lemon juice
1 teaspoon vanilla extract
Instructions
1. 350F. Coat a 9-inch square pan with cooking spray.
2.Cream 5 tablespoons butter and 1 cup sugar. Add egg and beat well. Stir in flour, baking soda, cinnamon, salt, apples and walnuts. Batter will be stiff. Spoon into prepared pan; smooth top. Bake about 35 minutes.
3. Combine remaining 3 tablespoons butter, 1/2 cup sugar, cornstarch and evaporated milk in a saucepan; bring to a boil over medium heat. Boil 2 minutes, stirring constantly. Remove from heat; stir in lemon juice and vanilla. Pour over hot cake. Serve warm. Serves 9.
3. Per serving: 340 calories, 20g fat, 5g prot., 41g carbs., 2g fiber, 290mg sodium.
