Preheat the oven to 450 degrees. Combine the sugar, flour, eggs, buttermilk, butter, and vanilla. Mix until well blended. Pour into the piecrusts. Bake for 10 minutes. Reduce the oven temperature to 350 degrees, and bake for an additional 40 to 50 minutes, until the center is firm.
