When carving your jack-o-lantern, don’t throw out the seeds. Get the kids to rinse off all the orange goo, sprinkle them with any seasoning you want—you can make them sweet or savory—and roast them for a crunchy, high-fiber snack. Here’s a spice combination we like.
Ingredients
Pumpkin seeds
Vegetable oil
Onion powder
Garlic powder
Sugar
Paprika
Chili powder
Kosher salt
Pepper
Instructions
1. Preheat oven to 400F. Place pumpkin seeds on a cake pan or baking sheet. Drizzle with a little oil. Sprinkle with remaining ingredients to taste. Toss well. Bake, uncovered, about 30 minutes or until seeds are dry and toasted.
