Stuffed Baked Tomatoes Recipe

Ingredients
4 tomatoes
6 tablespoons ricotta cheese
1/4 cup chopped fresh spinach
1 garlic clove, minced
1/4 teaspoon dried thyme
2 tablespoons finely grated Parmigiano Reggiano cheese.
Instructions
Preheat oven to 400F. Cut tomatoes in half crosswise. Combine ricotta cheese, chopped fresh spinach, garlic, thyme and grated Parmigiano Reggiano cheese. Top each tomato half with 2 tablespoons ricotta mixture. Bake 10 to 15 minutes.

I would like a few more specifics about the stuffed baked tomatoe recipe. It sounds delicious. Does anyone have anymore recipes that are good?
I have so many tomatoes and would love to find different ways to cook and freeze meals using tomatoes.

We intentionally left off the measurements in the Stuffed Baked Tomato recipe, since it's one you can easily alter to your taste.

Here's a good starting point.

4 tomatoes
6 tablespoons ricotta cheese

This recipe does not state how much of each ingredient to use. No measurements whatsoever!!

this is a wonderful recipe, you can make it for two or as many as you like . simple to make , ingreadients can be substituted by somthing else if you like.
